Canby’s newest restaurant, Guacamole Bowl Cuisine, is now open, and it’s unique in offering its signature specialty to all guests — free of charge.
“Our concept is to make fresh guacamole, complimentary for each table,” said owner and manager Francisco Javier Barajas.
Barajas was a partner in the previous restaurant that occupied this space — another Mexican eatery known as Los Dorados.
When his partner left the business due to the economic impacts of Covid-19, Barajas decided to stay on as sole owner — reopening under a new name and a concept that reminded him of his childhood in the Mexican state of Michoacán.
“There were avocados everywhere,” he said with a laugh. “As far as the eye can see. All the land was covered with avocados. I even had a small avocado farm.”
He was also driven to feature the buttery Mexican fruit because of its health benefits, he said.
“It’s very healthy,” explained Barajas, who also owns a small chain of Mexican grocery stores with locations in Wilsonville, Portland and Beaverton.
Barajas’ guacamole is made in the traditional style, featuring a unique blend of avocado, onion, cilantro and salt. It’s made and served tableside with chips and salsa.
The restaurant’s menu includes a wide variety of traditional favorites and unique recipes, as well as a full complement of beer, margaritas and other bar drinks.
